Set up a double boiler: Fill a saucepan with 1-2 inches of water and bring it to a simmer. Place a heatproof bowl on top, ensuring it doesn’t touch the water.
Melt the chocolate: Break your chocolate into small pieces and add to the bowl. Stir gently with a spatula as it begins to melt, until smooth and glossy.
